Chick Pea Broth

This recipe from Sarah who is one of our resident bloggers for our plant gang! She loves eating healthy and clean and shares lots of recipes and healthy products over at her instagram page.

Perfect for just after a killer leg day work out this soup is amazing and a definite dinner goals! It is full of healthy vegetables, herbs and spices so when you’re having an off day eat yourself back to health with this recipe.

Ingredients:

Half an Onion
Head of Cauliflower
1 Carrot
Handful of Peas
Fresh Tomato
Chickpeas
Vegetable Stock
3cm of Fresh Ginger
4 Garlic Cloves
1 Cup of Quinoa
1 Scotch Bonnet Pepper
Half a Plantain

Method:

To prep your vegetables, chop your onion, carrot, garlic, head of cauliflower and tomato into small pieces. Once this is done grate your fresh ginger or measured out your pre-dried ginger so you have enough that covers a level teaspoon.

If you are going to add the scotch bonnet pepper (recommended for those with a cold, really wanting to cleanse their sinus’ ) chop this too, however be cautious with amounts and always go with what you’re comfortable with (don’t add the seeds!).

Next, pop your Quinoa into a pan and bring to boil, at the same time make sure your soup is in a separate pan adding the garlic, onion, ginger, peas (especially if they’re frozen!), tomato and scotch bonnet. Bring this all to the boil and let simmer so that the flavors infuse.

Whilst both pans are still boiling chop half of your plantain and fry in a small frying pan with your choice of oil! We recommend Coconut oil. This shouldn’t take too long.

When the Quinoa is ready add this to the soup mixture, leave for five minutes to absorb some of the flavors, chose your favorite bowl and serve placing the lightly friend plantain on top and season with salt and pepper!

    I saw your tweet about animals and thought I will check your website. I like it!

    I love pets. I have two beautiful thai cats called Tammy(female) and Yommo(male). Yommo is 1 year older than Tommy. He acts like a bigger brother for her. 🙂
